Snowy Sunday

This morning I woke up to a Winter Wonderland! It was truly beautiful. A perfect Sunday to lounge around in my PJs all morning sipping tea and feeling grateful for a warm, cozy house. And that’s exactly what I did !
I wasn’t really hungry for breakfast until about 9:30. Lately I have been trying to listen to my body and eat when it’s hungry, instead of eating because I think it is time to eat. I am also trying for 3 meals a day lately , and so far so good. I have cut out almost all snacks during the week, I still have them on weekends now and then. This morning I had a Breakfast Cookie and a banana.
After hanging out most of the morning, I though I’d better get some of the usual preparation for the week done. I cooked a few chicken breasts for the coming week, and also made lunches for tomorrow and got Matt’s lunchtime snacks bagged up and ready.
When lunch rolled around I threw together some chicken salad which I had on a bed of spinach with Special K crackers , baby carrots and a clementine. I ate it while catching up on “The Biggest Loser” DVR.
I also had 2 “Little Debbie” swiss rolls dessert. 🙂
After lunch I made my own version of zucchini boats. I stuffed zucchini with “Kashi” Fiery Fiesta Rice and topped them with reduced fat Mexican cheese.
They smelled really great, but I will have to let you know how they taste when I eat them during the week ! This was a super easy way to make a side dish, I hope they taste as good as they look , because I will make them all of the time if they do !
Dinner tonight was Shrimp Ravioli. These have been in the freezer for a while. My husband bought them for me as a treat when he was doing a service call at a local Villarina store. At the time he bought them I was worried about the calorie content , since there is no nutritional information on the package. I decided to have them tonight anyway. I’ve had them in the past and they were excellent!
Tonight’s were just as good! I could have cooked the a bit longer, but they were still great. The filling is amazing! I had them with some fat-free parm. and a few spritzes of Olivio. I paired them with a spinach salad.
I couldn’t decide whether I wanted a Diet 7up cup cake or a scoop of ice cream ………… so I had both ! A cup cake and a spoonful of Churn Style Lite Chocolate Chip Cookie Dough Ice Cream. I think ice cream and cake are my absolute favorite dessert combo!
So another weekend is over. I got a lot done, and I am ready to start another week [I guess]. I just need to get though tomorrow and the rest of the week is all down hill. I am going to try to begin the week with a positive attitude. Another weekend is just 5 days away ! Have a great night !

I tried the breakfast cookie this morning and it rocked! I had it at 9:30, so I’m curious to see how long it lasts. 🙂 Thanks Susan!
