Productive Saturday

Today I got so much done ! I wanted to go to the beach but the weather was not going to cooperate.

Last night, because of the “snit” I was in, I ended up with a lot of nervous energy, so I cleaned my entire house and did a load of wash.

This morning I got up and got my workout done first thing. I did 30 min. circuit training and 30 min. HIIT on the spin bike. Then I had some breakfast.This is my absolute favorite cereal. I can’t always find it, but I got lucky last time I went to Big Lot’s so this morning I broke into it !

I had it with oatmeal and 1 T. of Dark Chocolate Dreams peanut butter. It was so good, I could have eaten 2 more bowls ……. but of course I didn’t !

I also had a cup of green tea.

About 10:30 I was hungry again. Half of it was probably boredom, but I decided to give into it anyway. I had 1 hard boiled egg on 2 Rye Crisp crackers.

Lunch was a whole grain sandwich thin, with a Laughing Cow Cheese wedge, some baby carrots, and whole grain crackers.

With an apple for dessert.
Then I decided to get to work ! I decided since I had extra time today , I would just do some cooking for the week.

I made Rosemary New Potatoes.

I cooked up some chicken breasts.

I made a Hungry Girl Recipe : Spinach, Mushroom, Mozzarella Supreme.
And then last but not least, I threw together a fat free / sugar free pudding pie made with a reduced fat pie crust …….. Whew ! A whole lot of cooking going on in my kitchen today !
At about 3:30 I had a handful of peanuts, before running out to do some errands.

When we got home I put together my dinner. It was delicious ! After dinner I folded the wash I did throughout my afternoon of cooking , and took a shower.

This is how I plan to spend the rest of my evening ! I love when I get a lot done in a day. I have no idea what the weather will be tomorrow, but no matter what it is, the only thing I need to get done is my workout. Other than that I am free !!!!!!

Recipe Review :

This weekend I tried two recipes from the first Hungry Girl Cook Book . One recipe I tried was the Butternut Squash Fries . The recipe is really simple , the only thing that takes time is the prep. Butternut squash is really dense , and hard to cut and peel . Other wise , once the prep is done it is so easy anyone can do it .

They we sooooo delicious ! They tasted a little bit like sweet potato fries , but not quite as sweet . I took a pic of them but for some reason it didn’t come out so I had to search for another pic, but the one above is exactly what the finished product looked like.

The portion was huge , and I really felt like I was eating fries ! It was great ! I will definately be making them again very , very soon ! I definately recomment this recipe to anyone who misses french fries and want to put more veggies into their lives ( I know I do ! ) .

Another recipe I tried was the Pepporoni Pizzas . Yes , I know you hardly need a recipe for these, but in follwing the recipe you get the perfect 190 calorie portion . These little pizzas were easy, delicious , and kept me full and satisfied for hours . They are the perfect Saturday lunch for me . I have been wanting pepperoni pizza now for months ! I finally got to have it for very few calories , but still a lot of taste ! I will absolutely be making them again and often especially on the weekends.

Next weekend I plan on trying my hand at Spaghetti Squash and I will be making Spinach, Mushroom Mozzarella Supreme from the second and most current Hungry Girl Cook Book so stay tuned for the review on those .

I love trying these recipes . I am always looking for new things It is especially rewarding when I find a recipe the mimics something I love but can’t eat because they are too calories for my budget and it is just not worth it ! I am finding that for the most part, I can replace old fattening foods for these low-cal substitutes , and not even feel it . That is a relief for me, because I need to make this lifestyle change sustainable , and not feeling deprived is a big part of it !

Happy Mother’s Day

Happy Mother’s Day to all the Mom’s out there in blogland ! My Mom is no longer with me but I think about her with love today as well as everyday . I miss her very much . As I get older I see more clearly all the lessons she taught me , and all the ways I am like her . I also see how much I resemble her , and that makes me happy . Later today I will visit her and bring her some flowers as a thank you for raising me with the feeling that I was always loved unconditonally . For always making a home for me that was secure and safe . I love you Mom !

Although I don’t have my own Mom on this beautiful Mother’s Day , I do have my husband Matt’s Mom to celebrate . She is pretty awsome as well ! We have a fun day with her planned , and I am looking forward to it. We are not so much into giving gifts . We like to give time instead . So when special occasions come up, like today, we try to plan a special day and give that as our gift .

Thankfully is an incredible day here in Connecticut ! We had a back up plan just in case the weather didn’t cooperate , but since the sun is shining , the original plan is on ! I will blog more about it tomorrow .

Yesterday was crazy ! So much to do ! I got more than most of it done though . I did some cooking , all sucessful I must say , more on that later in the week . I ended up still cleaning the house at 9:30 pm !!! But I am done now, finishing the last of the laundry , I still have some cooking for the week to do later , but I feel almost caught up ! ( Whew ! )
